Ah - sorry man, haven't made much sense here have i? (blame my stomach bug ;-))
Essentially, its all about magnet strength right? Magnet strength is either dictated by its composition (be that grades of Alnico, or its gauss) or its size.
So, all things aren't equal when we think of a magnets strength, because we have 2 variables - so its not as simple as saying "alnico 2 is weaker then Alnico 5 is weaker then Alnico 8" - because a 5mm tall Alnico 2 would be stronger then an Alnico 5 (but probably still not as strong as an Alnico 8 *(thats not strictly true - but its an easy lie)
So that brings us to Magnetic spacers.
If you take a "normal" bar magnet, and add in magnetic spacers (presumably in the same grade) - all you're essentially doing, is increasing the size of the magnet, and as such, its strength. (so why not just replace the bar magnet down the middle with something either stronger? or larger?)
The only real exception, is an over sized ceramic magnet - because thats about as strong as it gets (short of using a very expensive earth magnet, or maybe an Alnico 8 oversized) - there is no easy replacement/swap to increase strength.
When i say they don't really do anything, what i meant to say is "they don't really do anything that swapping out the central bar magnet for something stronger wouldn't"

My idea to use magnetic spacers was to combine A5 with A2 within one humbucker because they each have their own tonality. Actually, my plan was to use one A5 spacer to alter one coil in an A2 humbucker (the one active in split coil mode, to give it some more top end sparkle, and lower the volume difference between single coil/full HB mode).
Not sure how good the result would be, but it would be different than just swapping in a bigger magnet.
